Summer’s “Go-To” Cookie

Stop buying pre-made cookies in box, bag, crazy tube shapes or plastic container! Do you know how easy it is to have your own freshly baked cookies on hand? Cookies tha tyou know all the ingredients they contain and better yet you can actually spell them all!

These cookies are  a favorite for Vacation Bible School treats, picnics, reunions and afternoon summer snacks.  Make them in a 9 x 13 pan and you have a pseudo granola bar for road trips, camping trips and summer camp excursions.  Basically this might be the worlds best all purpose cookie!!  I remember always seeing an oatmeal cookie of some sort at church carry-ins and at vacation bible school.  In fact, I am sure my mom made some of them.

Make a batch of these, scoop the dough and freeze the rounds in a large freezer bag.  Pull them out of freezer and bake when you need them!  I talked about the scoops I use in this post: http://wp.me/p1A4Se-kM

I used Vanilla Bean paste that I purchased from King Arthur Flour and if you havent tried this stuff- go buy some right now!  Vanilla Bean Paste – 4 oz.. This would be terrific in homemade vanilla ice cream or vanilla sauce-anywhere you want a truly authentic vanilla taste without having to mess with the vanilla bean itself-truly marvelous stuff!

Just look at all the little vanilla bean seeds!

Oatmeal Cookies with your choice of Mix-ins

2 sticks of butter, softened (please dont use margarine, butter is better!)

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

2 tablespoons milk

2 tsp of vanilla bean paste or real vanilla extract

1 3/4 cups all purpose flour

1 tsp baking soda

1/2 teaspoon salt

2 1/2 cups of quick cooking oats

3-4 cups of mixins

1 tsp ground cinnamon (optional depending on what you mix-in)

Preheat oven to 375 degrees F. In bowl fitted with paddle attachment cream butter, sugars, until creamy.  Add in eggs, milk and vanilla bean paste or extract and beat well.  In separate bowl mix dry ingredients; flour, salt, baking soda and optional cinnamon.  Add to creamed mixture and mix until well combined.   Add oats mix to combine well. (this is the basic oatmeal cookie batter- now its time to put your own variation on the cookie)

Lastly add all your mixins (3-4cups) and combine well.

Scoop onto parchment lined cookie sheet and bake for 9-10 minutes for tablespoon sized scoop.  Cool completely, unless you cant wait.

For bar cookies press dough into 9 x 13 ungreased pan and bake approximately 30 minutes.  Cool completely and cut into bars or squares.

Suggested Mix-in combinations;

  • trio of chips: semi sweet, bittersweet, and milk chocolate
  • chocolate with nuts: bittersweet (my fav), dark chocolate chips and walnuts
  • dried cranberries, white chocolate chips and walnuts
  • Pecans, coconut and bittersweet chocolate chips
  • Chocolate chips, walnuts, golden raisins (I LOVE this combination)
  • Golden raisins, dark raisins, dried cranberries, dried apricots and nuts -what a combo!!

Can you see that the possibilities are endless and totally versatile to your family’s taste?!  One batter, so many variations!!  What are you waiting for?!
